About the Recipe
Ingredients:
- 1/2 cup sea moss gel
- 4 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 potato, peeled and diced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- Optional: chopped fresh herbs for garnish
Instructions:
1. In a large pot, heat some oil over medium heat. Add the diced onion and minced garlic, and sauté until softened and fragrant, about 3-4 minutes.
2. Add the diced carrot, celery, and potato to the pot, and cook for another 5 minutes, until the vegetables begin to soften.
3. Pour in the vegetable broth and bring the mixture to a boil.
4. Once boiling, reduce the heat to low and simmer for about 15-20 minutes, until the vegetables are tender.
5. Stir in the sea moss gel, dried thyme, and dried parsley, and continue to simmer for another 5 minutes, allowing the flavors to meld together.
6. Season the soup with salt and pepper to taste.
7. If desired, use an immersion blender to partially blend the soup for a thicker consistency, or leave it as is for a chunkier texture.
8. Ladle the soup into bowls, garnish with chopped fresh herbs if desired, and serve hot.
